Keeping the Glass Half Full – Greek Chicken & Navarro Rosé

ImageRosé is like a smooth cup of coffee… the ritual of sipping with good company is just as enjoyable as the liquid inside the vessel. I own 13 unique designs of mugs. My husband thinks I have a coffee problem. Some might claim I’m a hoarder. I actually just like sitting down with a different memory every morning to slowly sip each cup and embrace the java. I’m often taken to a place or reminded of the person that gifted the device. I will often continue with my tranquility by switching to decaf and slow sip through the late morning. Wine in its many facets can serve the same purpose. Rosé in particular has an approachability that seeks companions, length of enjoyment, and desires a memory to be created. 

This evening I wanted to be with Scott. My husband has been deployed for exactly 26 days. The number actually serves no significance. He is either here or absent. I enjoyed a glass of Navarro Vineyards Rosé of Pinot Noir purely for the memory and smile it would bring to my face. About 2 months ago we spontaneously drove to Mendocino in an effort to explore our new playground in Northern California. We drove the coastline and dove into the local wine culture. We sat outside for hours sampling wines and basking in the sun. I remember sitting there in complete serenity and taking a mental photo for the future.

There are two types of people. Some wake up in the morning and leave the house with one simple thought… ‘Ugh I have to work today. This sucks.’ Others open their eyes, enjoy a cup of coffee and pursue the day with an attitude that is thankful for a purpose. I ate alone tonight but couldn’t be more optimistic while sipping my glass of Rosé. When we can’t be living the experience, great memories will always carry us through.

Eat well with wine! Easy weeknight chicken recipe below that pairs wonderfully with Navarro’s Rosé. This dish has a little bit of spice with everything nice. The wine will act as a subtle companion along for the ride.

Greek Chicken and Spiced Sweet Potatoes

For the chicken… marinate all ingredients for 2 hrs. Coat the grill in olive oil over medium heat. Grill for 10 minutes each side and baste with excess marinade.

  • 1 lb chicken thighs
  • 1 clove garlic minced
  • Juice of 1 lemon
  • 2 tbsp plain greek yogurt
  • 1/4 cup minced red onion
  • Minced fresh herbs: rosemary, mint, and/or oregano
  • salt, smoked paprika, cumin

For the potatoes… season, chop into cubes, and grill on a pan for 40 minutes. Toss once or twice while grilling.

  • 1-3 sweet potatoes
  • Pinch nutmeg, salt, and cinnamon

    Sounds yummy! I love your writing too by the way- this entry made me want to sit back with some wine and/or coffee and just relax and enjoy : )
