Mid-Summer Night’s Dream

Summer is about taking breaks for ourselves…. take a breather this week with this dish. Juicy pork tenderloin with seasonal plums and fresh mint. The jelly will crisp and caramelize the outer skin for a mouth watering bite. Four ingredients!

I loved the summer’s growing up lounging by the pool or beach, eating chips all day long, and engaging in movie marathons at night. I long for those days often while I’m working away in the 100 degree heat and studying into the wee hours of the night for my wine class. Aside from the few breaks to go camping and visit family in California, this summer as a whole has been far from the concept of a blissful vacation. I have been squeezing in a few episodes of the series named, “The Story of Us”, an epic tale of how Americans grew to what we are today. In a nut shell, we work hard and our days are long. One area of my life that I will never let fail stares me in the face each evening at about 6pm. I promise I have been cooking, my apologies that I just haven’t had the time to share as often. This week I did feel the urge to pass along a dish I felt worthy for the masses. A four ingredient wonder and I promise your mouth will be watering for more. Dinner has become my daily escape from reality and I hope you’ll enjoy this mid-summer night’s dream amidst your own life as well.

Plum Stuffed Pork Tenderloin with Jellied Mint Glaze

  • 1-2 lb pork tenderloin
  • 2-3 plums sliced thin
  • 1-2 tbsp chopped fresh mint
  • 2 tbsp red currant or port wine jelly  
  • (salt, pepper, and olive oil to rub on pork)
Sliver the pork down the middle and pound out a bit. Stuff the pork with the plums, mint, and jelly. Tie together with string or hold together with toothpicks. Heat grill to about 350-400 degrees. Cook on each side for about 5 minutes and continuously rotate with out putting the slit down into the grill. Cook to minimum 145 degrees and max 180 degrees depending how tender you like it. Serve with corn and potatoes.

    OMG! Any leftovers? This looks amazing. And only 4 ingredients, what a fabulous treat. Can’t wait to try it. :) Wish Mr HG ate pork.
