Fuel Food :I have been a runner since I was 14 years old. I ran my first marathon this past Autumn. Always looking forward to the next race, I tend to jog in excess compared to most people. Rather than feeling healthy and energized, I often am fatigued. I always figured Clif bars were the best protein snack available to revitalize the spirit. Take a moment and read the back of the package. For me, it was too many ingredients to count. In an effort to take accountability for what is actually going into my body, I created this granola trail mix bar below. The addition of coconut oil helps bind the nuts, oats and fruit and is an amazing source of fuel for the body. Home-made granola bars
- 1 1/2 cups raw unsalted almonds chopped
- 1/2 cup sunflower seeds
- 3/4 cup dried cranberries
- 1 cup oats
- 1/2 cup honey
- 1/4 cup pure maple syrup
- 2 tsp nutmeg and cinnamon
- 1/4 cup coconut oil
Melt the coconut oil in the microwave – about 30 seconds. Chop the nuts and then combine all ingredients in a bowl. Line a square glass pan with parchment paper and mold the bar. Bake at 375 degress for thirty minutes.












WOW this sounds delicious. I may have to find a source of certified gluten-free oats and indulge once in awhile. Oatmeal was always a favorite of mine…in anything from meat loaf to granola bars! I know my dad will love this recipe. I’m forwarding to him too!
